As per documentation, the logo is served from /web/public (changing the constants in /packages/lib/constants.ts is required. Additional instance wide theming is possible in apps/web/styles/globals.css

I guess there is also hoping that Cal.com handles this differently in the future, making this also compatible with Cloudron's package.

You can still fork the package and build on your own of course https://git.cloudron.io/packages/calcom-app

This is a real struggle with nextjs which is as a framework very much designed towards vercel deployments...
