I get an error message under the text box saying: "There was a problem uploading your files." Which does not say that much to investigate. I'm tring to have a look at the mattermost log as well but nothing.. Any idea? Thanks in advance.

I read the article, which was really useful then I read the "How to install NFS server". After filling the server ip and remote directory, am I right? Thanks.

It should be OK for each to generate their own certs. Cloudron does not expose the SSL certs and it would not work to put this in gcore anyway since LE certs expire/renew every 3 months. You have to then remember to update certs in gcore every 3 months. Cloudron TLS cannot be disabled.
