Is this using the Nextcloud Mail app, or something else?
I don't use that app but it's sadly quite likely that it's just the Mail app hasn't been fully updated to be compatible with the latest Nextcloud or something.
Yes, as much as Iove Nextcloud they don't even check that core featured apps work
