Bonkers that such a widely depended upon plugin update was released by OnlyOffice that just borks everyones install. Apparently it's just completely missing all the js files it needs!

Upgrading to 9.1.2 has fixed it for me (although it sounds like that hasn't worked for some others - I'd guess possibly people who'd fiddled around more than I trying to get it to work again before
)Edit: also, on my other instance of Nextcloud where I hadn't updated it is now possible to update directly to 9.1.2
