Although as someone commented there they still mention free in the docs https://docs.mattermost.com/about/editions-and-offerings.html#mattermost-free

- Nextcloud Talk. Worth exploring if you're already using Nextcloud anyway
- Matrix/ Element

Truth is their offers have become very much confusing, and well they seems to be confused too as far as the licensing they propose now as cloud AND self-hosted seems to have the exact same price as 10/m/user for the "professional" version paid for a year in advance (?).
I believe this is quite tight for a small startup that would 'eventually' scale, nonetheless one can still use it for free with a fair amount of good features (I've just installed an instance and was evaluating it actually). But--as I explained in another thread about FOSS recently--this is NOT really what we know as REAL FOSS anymore, as the free version, whether Team or Enterprise (this is confused AND confusing as well), is crippled of functions and thus imho constitute more a SHAREWARE than a FOSS as we know it.
On another note, why bother self-hosting it if their price per seat is the same as their cloud offer? (wtf? loll amazing... )
I hate Talk as it's not even comparable imho, however Rocket Chat is more likely though I haven't checked them for a few years. Will take a look back for sure.

Well, that's very good question. And, thanks you for your insights in this matter.
According to this information you share about Matrix, I would guess the answer to your question is simply because of lack of knowledge about its features at first glance.
There's a lot of apps and it's sometimes hard to remember all that one can do above knowing it's a "federated communication platform" as I would have said if you asked me what is Matrix a few minutes before I read your post. So, again thank you, because this is how we often discover great solutions we had under the nose.
That entice me to revisit Matrix as I'd never had the occasion to do so. The main important point you put in evidence is the OPENNESS of the platform which nowadays has become very important, more than never.
Nevertheless, I believe also that Cloudron has it's own way of BEING OPEN
and as such, and I was going to like as well, I think we should still ADD ZULIP, as @robi suggested because it's an excellent platform. This platform would still be useful for many and, well its due a long ago on Cloudron as well.

I also really like how you framed Cloudron’s own way of being open – that made me smile and actually made me think a bit deeper about what "openness" means in different contexts.
You’re right: sometimes we overlook the tools right in front of us. Glad we could rediscover Matrix together – and yes, Zulip has strong merits too. I appreciate your balanced view.
