Full Name is not editable

Preferences > Mail > IMAP Accounts > Edit an account > add identity
Full Name field is not editable (greyed out) for the main identity and for new ones.
The doc page mentions the name defaults to the email address but it shows my name for me. Suggestions?
Also, any way to add dark mode?
