Options for self-hosted user-generated maps?

Does anyone have any good ideas on how I could most easily use open source tools (ideally self-hostable) to allow people in my local community to map all the already existing solidarity economy entities (local co-ops, social enterprises, organic farms, farmers markets, etc etc) in our community?

Perhaps https://karrot.world can be retrofit to purpose?

Sorry for reading this topic in perhaps too much of a hurry. Skimming it I focues on "map" but interpreted it as the noun, not the verb.
If you don't necessarily need an actual map but more of a database I'd recommend taking NocoDB and its form view for a spin.
I'd be interested in what you come up with, for coopy reasons.
