Re-package with assets in /app/data

The official app would benefit from
/app/code/assetsbeing/app/data/assets.That would allow easier replacement of logo and UI customisations.
Yes, I can try to do a custom package, or deploy as a LAMP app.
But IMHO there are positive enhancements of the official app package. -
I think at https://github.com/alextselegidis/easyappointments/issues/789#issuecomment-735396338 he says theming will sort this out. It seems change is in dev https://github.com/alextselegidis/easyappointments/commit/e9a9314909befcbb7126ba55046a4484f3724e1b#diff-390697e014e4ccd9fd7e5be5357079668f464e4dc5b699d5a114702ba7bc2494 but no new release yet.
