I thought I'd try it out but I'm guessing its name cubby is a unfortunate double up of the file sharing client made by log me in back in 2012 ?

Oh never heard of that product! But seems liks it is renamed/discontinued sind a long time https://www.theregister.com/2016/10/18/logmein_cubby_closing/

For your actual question, no desktop client exists (yet) But if anyone is interested in building one I am happy to help.

Any WebDAV compatible Desktop-/Mobile App should do, correct?
e.g. on iOS, FileBrowserGo works like a charm (I prefer this to the ubiquitous Documents, as it does not collect usage data).

Yes any WebDAV should do. However the webdav interface of cubby does only serve up the home folder so far. So this may or may not be sufficient for the use-case yet.
