Back up different parts of the app at different times

I am still experimenting with good backup settings. Currently, I am trying slow, but stable settings, and one backup can take up to 10 hours, during which I cannot re-install an app.
So, I was wondering: Can I perhaps back up different parts of the app at different times?
For example:- E-mails (which is already 64 GB) could be backed up during the day during which I can still work with apps
- Immich, for example, which has tens of thousands of small files, could be backed up separately while not affecting the rest of the server
- Everything else could be backed up during the night

“Different parts of the app” : sounds weird to me. And unmanageable.
In the example you give, it’s not different parts. It’s different apps, email, Immich etc
Maybe I’ve misunderstood but I think the wording is wrong. -
