Speccing a server for self hosting.

I am trying to convince a customer to move the 4 businesses he owns to a single server hosted from his office.
Each business has approx 10 employees.
He will want nextcloud to perform well for file sharing, including photos, and collaborative documentation creation.
Two businesses are on the same site, two others are remote, all have fiber internet.
And maybe confluence or similar for project management.
So my question is about the hardware requirement to make this run well.
I was just going to use a Acer Altos workstation with intel i7 13th gen, and 64GB RAM with a 2TB SSD. Would that be good enough ?Do backups to a NAS on the LAN, which copies the backup to an external disk the customer changes weekly.
He has a separate server running ESXi and a server VM for accounting / payroll / windows based maintenance scheduling app via VPN & RDP.

I think that'd do nicely myself.

Its a high speed fiber connection, and static IP. They have been using a VPN & RDP server from another office in a different city reliably for 3 or 4 years. if their internet disconnects they are effectively disconnected regardless of where the server is... is cloudron 8 still going to support some sort of multi-server clustering ?
