Why might people use Immich instead of some of the other image galleries (which are also available on CLoudron)?

I think Immich is more of a Google Photos replacement. Nextcloud Photos is probably comparable but I have not used it. Both of these support "auto upload" of photos from phone camera into the app. Piwigo is also an alternative but afaik it does not support automatic upload, which makes it not so useful.

Lychee is more of a photo gallery . You upload files manually and arrange them into albums.

The latest Nextcloud Photos app is great, but public folders don't work yet which is frustrating

        See eg https://github.com/nextcloud/photos/issues/1452

I use Cloudron with Gandi & Hetzner

This sounds quite interesting for me. When installing from the App Store I am greeted by this note:

          This app packages IMMICH 1.45.0

WARNING: NOT READY FOR PRODUCTION! DO >NOT USE TO STORE YOUR ASSETS. This project is under heavy development, there will be continuous functions, features and api changes.

is there a roadmap for the changes happening in the future? And an ETA when it might be stable to use?

Cloudron is waiting on Immich. Their roadmap for the project is here:
